Q: When doubling a zucchini bread recipe can I bake all 4 loaves at the same time?
I plan to double a zucchini bread recipe. It will make 4 loaves instead of 2. Can I bake all the loaves at once? Do I increase the oven temp. at all? How much longer should the bread take to bake? Do I put all 4 loaves on the same rack or 2 on a rack?

Should I just do one batch at a time?

A: Yes, you can, but try to keep the loaf pans from touching in the oven. The baking timing may take longer. Don’t be surprised if they are not fully cooked at the same time it takes to bake 1 or 2.

A: Prep: 15 min; Bake: 1 hr; Cool: 2 hr 10 min; 2 loaves, 24 slices each

3 cups shredded zucchini (2 to 3 medium)
1 2/3 cups sugar
2/3 cup vegetable oil
2 teaspoons vanilla extract
4 large eggs
3 cups all-purpose or whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking powder
1/2 cup coarsely chopped nuts
1/2 cup raisins, if desired (but I personally don’t put raisins in mine)

A: Pina Colada Zucchini Bread

4 c. flour
3 c. sugar
2 tsp. b. powder
1 tsp. b. soda
4 eggs
1 c. canola or safflower oil
1 c. greek yogurt
1 tsp. each coconut , rum and vanilla extracts
3 c. shredded zucchini
1 c. crushed pineapple
1/2 c. chopped nuts ( optional )
Line the bottoms of 3 greased and floured 8×4 ” loaf pans with wax paper and grease the paper ; set aside.
In lg. bowl , combine flour , sugar , b. soda and b. powder . In another bowl , combine the eggs , oil , yogurt and extracts . Stir into the dry ingredients until moistened . Fold in the zucchini , pineapple and walnuts . Transfer to the prepared pans . Bake at 350 degrees F. for 50 – 55 min. or until tester comes out clean . Cool for 10 min. before removing from pans .

2 c. flour
1 c. wheat germ
3 tsp. b. powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice
salt
1/2 c. oil
3/4 c. greek style yogurt
4 eggs
1 1/2 c. sugar

2 c. carrots , grated
1 c. zucchini , grated
3/4 c. raisins
1/2 c. crushed pineapple
Mix dry ingredients together ; set aside . Put eggs in lg. bowl and beat lightly . Add oil , sugar , honey and mix well ; then add rest and mix well . Add dry ingredients to egg mix and stir together until moist . Fill muffin tins 2/3 to 3/4 full . Bake at 350 degrees F. for 20 – 25 min. or until tester is clean .

Q: Zucchini bread recipe…Using yellow squash instead of zucchini, any other suggested changes? Spices, herbs?
I’m making bread using yellow crookneck squash instead of zucchini. Has anybody here ever done this before, and do you change your basic recipe at all, other than the change in the squash? Thanks.

A: Keep your basic recipe the same,for a bit extra add chopped walnuts in the batter,after bread is cool top with a good cream cheese frosting like the kind used on danish.Seems more like a desert then.

A: you can use honey instead,but when substituting honey for sugar use 1/4 less liquid than called for in the recipe.

Bisquick Zucchini Bread Recipe
2 cups bisquick
1 1/2 cup shredded zucchini
3/4 cup sugar
1/4 cup vegetable oil
3 eggs
1 tsp. vanilla
2 tsp. cinnamon
1 tsp. nutmeg
1/2 cup chopped nuts

Heat oven to 350°F. Grease bottom of loaf pan 9X5″. Beat all ingredients together on low speed for 30 seconds. Beat on medium speed for 1 minute. Bake until done, test with a toothpick.

Savory Zucchini Bread

1 cup biscuit mix

1 small onion — finely chopped

1/2 teaspoon salt

1/2 teaspoon seasoned salt

1/2 teaspoon oregano

1/2 cup parmesan cheese

Red pepper or Tabasco

2 tablespoons parsley, chopped

1 clove garlic, crushed

1/2 cup vegetable oil

4 eggs, slightly beaten

3 cups zucchini, thinly sliced

Mix all ingredients, adding zucchini last after other ingredients are well mixed.

Bake at 350 degrees for 25 minutes in a greased 13×9x2-inch pan.

A: Zucchini Cake

3 eggs
2 c sugar
1 c oil
2 c flour
2 t soda
3 t cinnamon
1/2 t baking powder
2 c chopped zucchini
3 t vanilla
1 c nuts

Beat together at high speed eggs, sugar and oil. Sift together the dry ingredients and add the egg mixture along with the zucchini, vanilla and nuts. Bake in a greased and floured Bundt pan at 350 degrees for 1 hour. Cool on wire rack. Remove from pan and glaze.

Glaze

1 c powdered sugar
1 t vanilla
1/2 c water

Combine ingredients until smooth and creamy.

(This is a recipe that my mom uses. We are vegetarians and therefore, we do not eat eggs…so this is a special recipe just for people who are vegetarians…but I am sure you will love it more than the regular kind or not eve notice the difference! Here I go:)

2 cups sugar
3/4 cup vegetable oil
3 cups flour, sifted
2 cups zucchini (shredded or tossed lightly through blender..chopped VERY small. My first time trying this I accidently messed up!!!!!!!)
2 1/4 teaspoons vanilla
3/4 cup low-fat vanilla yogurt
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 1/4 teaspoons cinnamon
3/4 teaspoon nutmeg

Preheat oven to 350 degrees, and grease ONLY the bottoms of two loaf pans.
Measure yogurt into a medium sized mixing bowl.
Add sugar and blend until creamy and slightly thick approx 2-3 minutes
Add oil and blend through.
Add zucchini and vanilla and stir until mixed through.
Sift flour in a medium bowl and add cinnamon, nutmeg, baking powder& soda, and salt to it.
Add dry ingredients to wet ingredients a little at a time.
I like to slowly mix it in with my whisk.
Fold ingredients into each other just until nicely combined.
Pour’batter’ into loaf pans, and put into oven.
Bake for 1 hour (60 minutes) and check to see if it is done (knife poked through center should come clean when done).
If it is not done, continue to bake for additional time.
It could take between an hour and an hour and a half to bake completely.

p.s. if you like thye taste of walnuts…add them in addition to the nutmeg but just make sure the walnuts are in small sizes so you don’t choke by surprise when you eat the yummy in your tummy bread =]!

A: If the zukes are really big don’t use the seeds. Slice it lengthwise and scoop the seed out with a spoon and then grate it. Leave the skin on for more nutrients.

Vegan Zucchini Bread Recipe

INGREDIENTS:

* 2 cups grated zucchini, about 6 zucchini
* Egg replacer for 3 eggs
* 1 cup oil
* 2 cups sugar
* 1 tsp vanilla
* 3 cups flour
* 1 tsp salt
* 1 tbsp baking soda
* 1 tbsp cinnamon
* 2 tsp nutmeg
* 1 tsp baking powder

PREPARATION:
Preheat the oven to 350 degrees. Lightly grease 2 bread pans.

Stir together the zucchini, egg replacer, oil, sugar and vanilla. Add the remaining ingredients and stir well.

Pour the batter in to the pans and bake for 50-60 minutes.
