Q: Snickerdoodle cookies?
I am looking for a good recipe for these cookies. Are they really just sugar cookies with cinnamon-sugar on the outside? Also, what are your feelings on how they should be formed? Should they be rolled out and cut or made like drop cookies? Any other favorite cookie recipes are welcome and I’d prefer recipes that you have tried out yourself. Thank you.

A: Snickerdoodles are not just sugar cookies… they contain cream of tartar and most sugar cookies do not.

I think they should be rolled into little balls, then into cinn-sugar. This way as they bake, they get a crackled look to them, which emphasizes the cinn-sugar.

I like the Snickerdoodle recipe in the Betty Crocker cookbook. Basic but great! (may be online, too… never checked)

A: Snicker doodle Cookies
1 1/2 cups Sugar
1 cup Shortening — soft
2 each Eggs
2 3/4 cups Flour
2 teaspoons Cream of tartar
1 teaspoon Baking soda
1/2 teaspoon Salt
2 tablespoons Sugar
2 teaspoons Cinnamon

Preheat oven to 375F.
Mix 1 1/2 c. sugar, shortening and eggs. Stir in flour, cream of tartar, and soda. Chill dough. Roll dough into balls the size of walnuts. Com- bine 2 t. sugar and cinnamon. Roll cookies in this mixture.
Bake for 8-10 mins., cool completely on wire racks.

“These wonderful cinnamon-sugar cookies became very popular with my friends at church. My pastor loves them! You will too! Crispy edges, and chewy centers; these cookies are a crowd pleaser for sure!”

INGREDIENTS:
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

Q: I am looking for a puffy, chewy snickerdoodle cookie recipe that is not flat or dry. Any suggestions??
I have tried several recipes w/o good results. Flat greasy or dried out cookies are not what I am looking for. Remember the big puffy cinnamons clouds from childhood?? Can anybody help me to recreate them?? thanks tina

A: How to Get the Texture You Want in Your Cookies

Puffy – If you like your cookies all light and puffy, try some of the following tricks: Use shortening or margarine and cut back on the fat, add an egg, cut back on the sugar, use cake flour or pastry flour, use baking powder instead of baking soda, refrigerate your dough before baking.

Chewy – If chewiness is your desire remove the cookies a few minutes before they are done, while their centers are still soft and not quite cooked through. The edges should be slightly golden but the middle will still look slightly raw. Use brown sugar or honey as a sweetener. Try using egg yolks instead of whole eggs, this will add some extra moistness to the cookies thus helping to be a bit more on the chewy side.

A: I make these every year for christmas.

SNICKERDOODLES

INGREDIENTS
1 cup shortening

4 Eggs

Stir in …

5 1/2 Cups Sifted Flour
4 Teaspoons Cream of Tartar
2 Teaspoons Soda

Chill Dough for 1-2 Hours.
Roll into balls the size of walnuts.
Roll balls in mixture of sugar and cinnamon.
Place on cookie sheet.

Bake until slightly brown.

Remove to cooling rack.
Makes about 8 dozen 2 1/2″ cookies.

i found a recipe for snickerdoodle cookies requiring half and half butter/shortening. Can u use all butter or will it ruin the cookies?

A: yes you can sub the butter for the shortening no problem. Margarine would also work.

A: I lived overseas for 8 years, and cream of tartar was not available. I have a recipe we used for Snickerdoodles that doesn’t use c. of tartar:

1 cup soft shortening
1-1/2 cup sugar
2 eggs
2-3/4 cups sifted flour
2 tsp baking powder
1 tsp soda
1/4 tsp salt

Heat oven to 400 degrees. Mix shortening, sugar and eggs. Sift remaining ingredients together and stir in. Roll into balls the size of small walnuts. Roll in mixture of 2 Tbsp. sugar and 2 tsp cinnamon. bake 8-10 minutes or until lightly browned but still soft.

These are good cookies, and you will never know there is no c of tartar!

A: Ingredients:

1/2 cup butter, softened

1 1/2 cup sugar

2 eggs, beaten

1 tsp vanilla

2 3/4 cup all purpose flour

1 tsp cream of tartar

1/2 tsp baking soda

1/4 tsp salt

2 Tbsp sugar

2 tsp cinnamon

DIRECTIONS:

Combine 1 1/2 cup sugar and butter beating until fluffy.
Beat in eggs and vanilla.

Sift flour, cream of tartar, baking soda and salt and add to beaten mixture.

Combine 2 Tbsp sugar and 2 tsp cinnamon in a small bowl.

Preheat oven 400°.

Shape dough into 1 inch ball and roll in cinnamon sugar mixture.

Place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes.

Variations:

Chocolate Snikerdoodles- 1/2 cup unsweetened cocoa can be substituted for 1/2 cup all purpose flour.Bake at 400° for 6 to 9 minutes or until set
Whole wheat Snikerdoodles- A combination 1 cup whole wheat flour and 1 cup all purpose flour can be substituted for 1 1/2 cups all purpose flour. Bake at 350° for 10 to 14 minutes or until set.
