Q: What is the Knorr Vegetable Soup pasta salad recipe?
There used to be a great recipe for pasta salad on the back of the Knorr vegetable soup packets. I can’t seem to find the recipe anywhere anymore. Does anyone have the Knorr Vegetable Soup pasta salad recipe?
The recipe is not on Knorr’s Web site or any recipe site that I can find. It’s plain old cold pasta salad, with veggies, a soup packet, and some quantity of oil and vinegar? Anyone have a hard copy of the recipe in their cabinet?

SERVES 4
PREP TIME: 20 Minutes
COOK TIME: 10 Minutes
INGREDIENTS
2 Tbsp. I Can’t Believe It’s Not Butter!®
1-1/4 cups water
1 package Knorr® Vegetable recipe mix
1 cup heavy or whipping cream
1/4 cup grated Parmesan cheese
1 Tbsp. lemon juice
1/4 tsp. grated lemon peel
1 lb. linguine, cooked and drained
1/4 cup toasted chopped walnuts (optional)
PREPARATION
In 2-quart saucepan, melt Spread over medium heat, then stir in Knorr® Vegetable recipe mix blended with water. Bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Stir in cream, cheese, lemon juice and lemon peel. Bring just to a boil over medium heat. Simmer, stirring occasionally, or until cheese is melted. Toss with hot linguine, then sprinkle with walnuts.

A: This is very good, just leave the tomatoes out. You can play with it add some mushrooms, black olives, etc.
Chilled Spaghetti Salad
1 pound thin spaghetti, broken into 3-inch pieces
2 cucumbers
1 green bell pepper
2 medium tomatoes
2 medium onions
1 small bottle Italian dressing
1/2 (2 ounce) bottle McCormick’s Salad Supreme Seasoning
Cook and drain spaghetti; set aside. Peel cucumbers; remove seeds and cut into small pieces. Cut green pepper, tomatoes and onions into small pieces. Mix all ingredients with the spaghetti including seasoning. Pour Italian dressing over all. Let marinate overnight.

We’re having a 4th of July bbq, and I need a good recipe for either potato salad or pasta salad. Something summery, that goes with bbq’d burgers, chicken, and Italian sausage.
BTW, a few of the people coming to my bbq hate mayonnaise, so I’d like to stay away from a potato salad that contains it. I really like stuff that has a lot of vinegar. I love the tangy taste.

A: Make your potato salad with a little mayo. You don’t have to add a lot. Then mix mustard, dill relish or chopped dill, and red onion if you like, and salt, pepper, Cajun seasoning, and garlic and onion powder. It’s the best potato salad. You won’t taste the mayo but you’ll need it to bind the ingredients. 2D

A: Creamy Dilled Salmon Pasta Salad
Ingredients:
6 oz. pasta noodles
1 can salmon
2 slices purple onion
1/2 long english cucumber-sliced and diced
1/2 bell pepper, any colour-chopped
2 tbsp. dried dill weed
salt to taste
Dressing:
1 cup mayonnaise
2-3 tbsp. lemon juice
Boil noodles for 6-9 minutes. Drain,rinse and cool.
Add all other ingredients and gently mix.
Mayonnaise can be blended with yogurt or sour cream, or it can be excluded altogether and substituted with one or the other.
Lemon juice can be substituted with flavoured wine vinegar or lime juice.

A recipe where there is tri-color rotini pasta, sliced black olives, finely cubed red bell pepper that IS NOT mayonnaise/salad spread based.

A: Here are a couple:
Pasta Salad
Ingredients
1 tablespoon olive oil
2 tablespoons salt
1 pound pasta, small tubes, rotini or shells
3/4 cup extra virgin olive oil
3/4 cup black olives
1/2 cup red pepper, cubed
2 medium tomatoes, peeled, seeded, and diced
1 large red onion, diced
3 pickles, diced
2 bunches fresh oregano, leaves only, chopped
1/3 cup red wine vinegar
3 dashes hot sauce
Salt and freshly ground black pepper to taste
Directions
Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil, and pasta, and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cool, transfer to a bowl, and toss with 1/4 cup extra virgin olive oil.
Mix all remaining ingredients in a bowl. Toss with pasta, adjust seasonings, and serve.

Ingredients
1 pound macaroni elbows, rotini or cavatappi pasta
Salt
1 cup frozen corn, defrosted
1 red bell pepper, chopped
1 small red onion, chopped
4 ribs celery, chopped
Black pepper
8-ounce brick Monterey pepper jack cheese, diced
2 tablespoons red wine vinegar, eyeball it
1/4 cup extra-virgin olive oil, eyeball it
1 cup store bought tomatillo salsa (mild, green) or chipotle salsa (hot, smoky red)
2 tablespoons chopped cilantro leaves or flat-leaf parsley
Directions
Bring water to a boil, salt it and add pasta.
While pasta water is coming up to a boil and cooking, combine corn, pepper, onion and celery in a bowl with pepper Jack cheese. Season the veggies with salt and pepper.
Run pasta under cold water to cool it and drain it well. Add pasta to vegetables and cheese.
Place vinegar in a small bowl and whisk in extra-virgin olive oil, then fold in salsa. Pour sauce over salad and toss to coat evenly. Garnish salad with cilantro or parsley and serve.

3 cups penne pasta, cooked, drained and cooled
4 tomatoes (1-1/2 lb.), chopped
12 slices OSCAR MAYER Hard Salami, chopped
1 cup KRAFT Natural Italian* Cheese Crumbles
1/2 cup sliced fresh basil
1/2 cup KRAFT Grated Parmesan Cheese
1/2 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing
TOSS all ingredients in large bowl; cover.
REFRIGERATE at least 1 hour before serving

A: TUNA & PASTA SALAD
1 pkg. sm. sea shell pasta
1 bunch broccoli flowerets (blanched)
2 zucchini, sliced
1 carrot, grated
2-3 green onions, chopped
1 (6 1/2 oz.) can tuna
DRESSING:
3/4 c. Miracle Whip
2 tbsp. spicy brown mustard
Milk to thin
Cook pasta according to package direction. Cool. Mix together pasta, tuna, broccoli, zucchini, carrots and green onions.
Mix together Miracle Whip, mustard and enough milk to thin slightly. Pour over pasta/vegetable mixture mix until well coated. Season to taste with seasoning salt and pepper.

1 bottle Zesty Italian dressing

A: Cooked pasta of your choice, veggies if you want like tomato, onion celery, add 1/2 a packet of Italian dressing mix dry with the mayo or miracle whip and stir. Tastes great with just pasta or with the veggies. Add cooked chicken, turkey, beef, or pork if you desire. (I don’t add any salt or black pepper to this at any time, don’t add salt to pasta water either, the Italian dressing dry mix is great flavor without salt.) Eat warm or cool and serve as chilled salad.

Bacon Ranch Pasta Salad
1 (12 ounce) package uncooked tri-color rotini pasta
10 slices bacon
1 cup mayonnaise
3 tablespoons dry ranch salad dressing mix
1/4 teaspoon garlic powder
1/2 teaspoon garlic pepper
1/2 cup milk, or as needed
1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 cup shredded sharp Cheddar cheese
Bring a large pot of lightly salted water to a boil. Stir in rotini pasta and cook for 10 to 12 minutes or until al dente; drain.
Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
In a large bowl, mix mayonnaise, ranch dressing mix, garlic powder, and garlic pepper. Stir in milk until smooth. Place bacon, tomato, black olives and cheese in bowl and toss to coat with dressing.
Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.
When I want to make it with peas, I add frozen peas in the water with the pasta about 3 minutes before the pasta is done cooking.

Ingredients
Salad:
1 pound farfalle pasta
Freshly ground black pepper
1 tablespoon olive oil
1 yellow squash, sliced into 1/4-inch thick discs
1 zucchini squash, sliced into 1/4-inch thick discs
1 cup diced sun-dried tomatoes
1 cup packed fresh basil leaves
1/2 cup fresh packed parsley leaves
Dressing:
2 tablespoons apple cider vinegar
2 garlic cloves, lightly crushed with the side of a knife blade, and quartered
1 teaspoon stone ground mustard
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup extra-virgin olive oil
Directions
Boil the pasta in salted water until al dente and drain well. Toss with ground black pepper and olive oil.
For the dressing, add the vinegar to a blender and replace the lid. Turn on the blender add, 1 at a time through the feed opening, garlic, mustard, oregano, basil, salt, and black pepper. Leaving the blender running, add the olive oil in a slow thin stream.
Toss together the pasta, yellow squash, zucchini, sun-dried tomatoes, basil and parsley with enough of the dressing to coat. Serve any additional dressing on the side.

1/4 cup tarragon vinegar
2 Tbs. plus 2 tsp. olive oil

Creamy Buttermilk Dressing:
1 large garlic clove, minced
1/3 cup mayonnaise
1/3 cup sour cream
1/3 cup buttermilk
3 tablespoons rice wine vinegar
Pasta Salad:
2 tablespoons salt
1 pound bow tie (farfalle) pasta
8 ounces trimmed asparagus, cut into 1-inch lengths
1 pound cooked chicken breast strips, pulled into bite-size pieces
8 ounces cherry tomatoes, halved and lightly salted
1 (14 ounce) can whole artichoke hearts, drained, cut into sixths
3 green onions, thinly sliced
1/2 cup pine nuts, toasted in a small skillet over low heat until golden
1/4 cup pesto (homemade or refrigerated prepared variety)
DIRECTIONS
Mix dressing ingredients in a small bowl; keep chilled until ready to toss with salad. (Store in clean jar with lid.)
Bring 1 gallon of water and 2 Tbs. of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding asparagus the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside to cool while preparing remaining salad ingredients.
Place all salad ingredients (except buttermilk dressing) in a large bowl or transfer to a gallon-size zippered bag. (Can be covered and refrigerated several hours at this point.) When ready to serve, add dressing; toss to coat and serve.
