Anyone have any recipes to make meatballs.

A: I don’t have exact measurements, so you’ll have to go with trial and error. But when my mom makes meatballs she uses ground beef, breadcrumbs, chopped onion, and milk to make it stick together. Then she either puts them right into the crock pot to cook all day with the sauce(the best way in my opinion) or for a quicker way you can put them on a cookie sheet and throw them in the oven till their cooked all the way through.

A: Italian-American Meatballs

Recipe Summary

2 slices white sandwich bread, stale
1/2 pound ground pork
1/2 pound ground veal
1/2 pound ground beef chuck
1/2 cup plus 2 tablespoons grated Parmesan
1/4 cup chopped flat-leaf parsley
2 teaspoons kosher salt
1/2 medium onion, grated (about 1/4 cup)
2 cloves garlic, minced
1 large egg, beaten
Freshly ground black pepper
1/3 cup olive oil, divided
Quick Marinara Sauce, recipe follows
Serving suggestions: 1 pound cooked spaghetti or linquini

Grate the bread or pulse into crumbs in a food processor. In a small bowl toss the bread crumbs with 1/3 cup cold milk to re-hydrate.
In a large bowl, combine the bread crumbs, pork, veal, beef, Parmesan, parsley, salt, onion, garlic, and egg and mix until combined. Season the meat mixture with pepper.
Using your hands, gently form the meat mixture into 18 slightly larger than golf ball-sized balls. (Packing the meat mixture too tightly together will result in tough meatballs). Refrigerate for at least 1 hour or up to 24 hours.

Heat half the oil in a large nonstick skillet over medium-high heat. Add half of the meatballs and cook, turning occasionally, until well browned on all sides, about 6 minutes. Transfer the meatballs to a plate. Drain the oil and wipe out the skillet, return to the heat, and repeat with the remaining oil and meatballs.

Drain and wipe out the skillet again. Return all the meatballs to the skillet and pour in the marinara sauce. Bring to a boil, lower the heat, and simmer, covered, swirling the pan occasionally, until the meatballs are cooked through about 15 minutes. The cheese in the meatballs will start to melt when the meatballs are ready. Serve immediately with the Quick Marinara Sauce and spaghetti or on sandwiches. If serving with spaghetti, toss with 1/3 of the sauce.These meatballs can be stored, covered in the refrigerator for 3 days, or frozen for up to 6 weeks.

Quick Marinara Sauce
1/4 cup extra-virgin olive oil
1/4 medium onion, diced (about 3 tablespoons)
4 cloves garlic, sliced
3 (28-ounce) cans whole, peeled, tomatoes, roughly chopped
3 sprigs fresh thyme
1 small bunch fresh basil, leaves chopped
2 teaspoons kosher salt
Freshly ground black pepper
Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 5 minutes. Add the tomatoes, the herb sprigs and basil and bring to a boil. Reduce heat and simmer, uncovered for about 15 minutes or until thickened

Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste. Serve or store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.

A: INGREDIENTS

1 Lb. Italian hot sausage (with or without casing) *
1/2 Tspn poultry seasoning
1 Small onion, diced
1 Egg, beaten
1/2 Cup bread crumbs
3/4 Cup chili sauce
1/2 Cup ketchup

DIRECTIONS

If you have purchased sausage in a casing, slide a knife down the casing to break it open, and then remove the sausage. Place sausage, diced onion, egg and poultry seasoning and bread crumbs in a large bowl and mix ingredients well. Do not over mix.

Make 8 to 10 meatballs and brown them evenly in a large frying pan over medium high heat. When meatballs have browned, remove grease by pouring it from pan. Remove pan from heat while you mix the chili sauce and ketchup together. Pour sauce mix over meatballs.

Stir meatballs and sauce gently to blend well, making sure all meatballs have sauce. Cover frying pan and continue cooking over medium low heat for 25 to 30 minutes until the meatballs are done. Serve over pasta.

I’ve been dying to make spaghetti and meatballs from scratch…well at least the sauce and meatball part. Does anyone know of any really good recipes? Can you please share or tell me where to find them?

A: My parents landlord, when they first got married, was from Italy and gave my mom this recipe:

Sauce:
3 cans tomato paste
1 can tomato puree
3 stalks celery chopped fine
1 med onion – chopped fine
1/2 tsp oregano
1/4 tsp sugar

Mix together and let simmer 3-4 hours.

Meatballs

1lb ground beef
1 egg
1/4 tsp oregano
2 tsp. parsley
1/2 c. bread crumbs
salt & pepper to taste

Roll into medium sized meatballs and cook until done. Add to sauce for entire cooking time.

A: If you like, add beef bullion cubes to the milk and skip the liquid beef broth. Delicious with cooked pasta or as a meatball sandwich.

1 LB ground beef or meat of your choice
½ cup unseasoned dry bread crumbs
½ cup Romano or Parmesan cheese, finely grated
¼ cup whole milk
¼ cup low-sodium beef broth
¼ cup chopped fresh parsley
1 egg, beaten
1 teaspoon dried oregano
2 teaspoons garlic, minced
2 teaspoons kosher salt
2 teaspoons ground black pepper
1 teaspoon dried basil
½ teaspoon dried pepper flakes
Pinch nutmeg

Yield: about 16 golf-ball sized meatballs

Combine all ingredients and stir thoroughly with a fork.
Bake at 425F for 25 minutes or fry as desired.

To freeze: place raw meatballs on cookie sheet, 1 inch apart and freeze one hour. Pop the frozen meatballs off the tray and place in a zipper-type baggie. Roll up and return to freezer. To use, bake from frozen at 425F for 30 minutes.

A: Don’t have to follow a recipe, you can’t screw meatballs up.
I mix ground beef and ground sausage in a bowl adding in seasonings we like–garlic and onion powder, salt and pepper–add in breadcrumbs, and mix it all up. You can make them any size you want. For smaller ones I just brown them up in a heated skillet with some olive oil and fresh garlic. For larger ones, I brown the outside but then put them in a pan and bake them in the oven.

If you want to add an egg go ahead, I don’t find it necessary. You can certainly use Italian breadcrumbs which I often do for added flavor. You can make meatballs from small, marble size to softball size!!

I just made some meatballs with ground up “Chili-n-cheese” flavored Corn Chips, beer and habenero sauce, as the added ingredients. They were awesome! But I think it’s more of a dude thing. Does anyone have a more civil recipe, without giving me a link or website?

A: 2 lbs. ground chuck beef
1 lb. ground pork [can use all beef]
11/2 cups Italian bread crumbs
1 cup grated Parmesan cheese
3 eggs–beaten
1/4 cup parsley
1/2 to 3/4 cup milk
1/2 tsp. garlic powder
1/4 tsp Italian seasoning
pinch of ground nutmeg
1/4 tsp. crushed red pepper
salt & pepper to taste

in large bowl mix the seasonings, parsley, bread crumbs and grated cheese, then add meat, and eggs and gradually add milk as you mix. You want them to be moist but not too wet. Roll into balls [whatever size you prefer] place on lightly sprayed with cooking spray cookie sheet and bake at 350 for approx 20 to 30 minutes depending on size, turning with tongs every 10 minutes.
When browned on all sides add to your favorite home made sauce. ENJOY!

These can be frozen after they are cooked.

i’m looking for a recipe that i can freeze then just grab the meatballs as needed….ty!

A: Basic Meatballs

1 lb ground beef
1/4 cup onion, chopped
1/4 cup milk
1 egg
1/3 cup bread crumbs
tsp. worcestershire sauce
3/4 tsp salt
1/4 tsp pepper

Preparation -
Mix all ingredients together. Shape into 1 1/2″ to 1 3/4″ balls. Place in a lightly greased 9″ x 13 ” baking pan. Bake uncovered at 375º for 25 to 30 minutes. Drain off fat before adding sauce

A: Meatballs and 2 sauces. Good luck.

Basic Mini-Meatballs

1 # ground beef
½ # ground pork
¼ cup finely chopped onion
¾ cup soft bread crumbs
2 eggs
1 tsp salt
1/8 tsp nutmeg
Pepper to taste

Mix all well. Roll into small balls. Brown in a minimum of oil until browned all over.

In a 2 quart casserole dish, cover with whatever sauce you are using, bake covered @ 350 for 60 minutes, remove cover and bake 15 minutes more.

Cocktail Meatball Sauce

1 – 16 ounce bottle catsup
4-5 tablespoons brown sugar
2 tsp dry mustard
3 tbsp vinegar
3 tbsp chili sauce

Mix all well and cover meatballs. Can probably be used to cover mini-franks as well.

Mexican Meatball Sauce

1 – 5 ounce jar processed cheddar cheese spread
¼ cup milk
1 – 10 ounce can enchilada sauce
1- 16 ounce can whole kernel corn, drained
2 Tablespoons chopped green chilies
2 cups crushed corn chips

Melt cheese and milk over low heat; add rest of ingredients, mix and heat.
Pour over meatballs

A: 1 1/2 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon pepper
1/4 cup plain bread crumbs

Sauce:

1 bottle chili sauce
1 jar grape jelly

Preheat oven to 350°F. Combine garlic powder, seasoning salt, pepper and bread crumbs with ground chuck. Mix well and make into meatballs. Cook in preheated oven 30-35 mins or until done.
While meatballs are baking, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly has melted.

When meatballs are done, remove from oven. Drain and transfer meatballs to saucepan and coat well with sauce before serving.

Enjoy!

A: Ingredients
For the meatballs
2 tbsp olive oil
150g/5oz onion, finely chopped
1 clove garlic, crushed
900g/2lb freshly minced beef
2 tbsp freshly chopped herbs, such as marjoram, or 1 tbsp rosemary
1 free-range egg, beaten
salt and freshly ground black pepper
3 tbsp olive oil
For the tomato sauce
3 tbsp olive oil
110g/4oz onion, sliced
1 garlic clove, crushed
150g/5¼oz fresh mozzarella, grated
1 tsp sugar
salt and freshly ground black pepper
2 x 400g/14oz cans tomatoes
Method
1. Heat two tablespoons of olive oil in a heavy stainless steel saucepan over a gentle heat and add the onion and garlic. Cover and sweat for four minutes, until soft and a little golden. Allow to cool.
2. In a bowl, mix the minced beef with the cold sweated onion and garlic. Add the herbs and the beaten egg. Season the mixture with salt and pepper.
3. Fry a tiny bit to check the seasoning and adjust if necessary. Divide the mixture into approximately 24 round balls. Cover the meatballs and refrigerate until required.
4. Meanwhile, make the tomato sauce. Heat the oil in a stainless steel saucepan.
5. Add the sliced onion and the crushed garlic, toss until coated, cover, and sweat on a gentle heat until soft and pale golden.
6. Slice the canned tomatoes and add, with all the juice, to the onion mixture.
7. Season the contents with sugar, salt and freshly ground pepper.
8. Cook the tomatoes uncovered for approximately 30 minutes or until the tomato softens (while this is cooking make the meatballs).
9. Heat a frying pan and cook the meatballs for about 10 minutes in about three tablespoons of olive oil.
10. When they are cooked, put them into an ovenproof dish with the tomato sauce and top with the grated mozzarella. Place under a preheated grill until the cheese has melted.
11. Serve with spaghetti.

A: This probably won’t work for you right now but it is a Make-Ahead recipe that will help you the next time you have a craving. Also for a fast meal after the little one comes. Good luck with your pregnancy

Make-Ahead Barbecued Meatballs

Meatballs:
3 pounds Ground Beef
1 cup Quick Cooking Oats
1 cup Crackers — crushed
1/2 cup Onion — chopped
12 ounces Evaporated Milk — (1 can)
2 Eggs
2 teaspoons Chili Powder
1/2 teaspoon Garlic Powder
2 teaspoons Salt — or to taste
1/2 teaspoon Black Pepper

Combine all ingredients for meatballs. Mixture will be soft. Shape into walnut-sized balls. Arrange in a single layer on wax paper-lined cookie sheets. Freeze until solid and store frozen meatballs in freezer bags.
Makes about 80 meatballs.

Barbecue Sauce:
2 cups Ketchup
1/2 teaspoon Liquid Smoke Flavoring
1/4 cup Onion — chopped
1 cup Brown Sugar
1/2 teaspoon Garlic Powder

Combine all ingredients for barbecue sauce and stir until sugar dissolves.

To serve, place 20 – 30 meatballs in a 9 x 13 inch pan. Pour sauce over meatballs.

Bake at 350 degrees F for 1 hour.

Note: These are very versatile and may be added to spaghetti sauce and simmered until done, or cooked with a mushroom soup sauce in the oven and served with mashed potatoes.

Unfortunately my friends mother won’t give anyone her recipe.

When my mother makes meatballs they taste dry, beak apart easily and taste like it has a few ‘rice size’ pieces of rubber inside the meatballs.

Homemade Meatball Recipe
with Fresh Tomato Sauce

This Homemade Meatball recipe offers comfort food at its best. The baked meatballs offer a healthy alternative to the more usual fried recipes. Once cooked, the meatballs are further baked in a fresh tomato sauce (use one can of tomatoes if fresh ones are unavailable).

Purists would have you remove the skins of the tomatoes, but I always cook them with the skins on and find that this doesn’t compromise on flavor.
# Easy
# Preparation time: 15 minutes
# Cooking time: 1 hour for meatballs and 40 minutes further once assembled
# Makes about 16 meatballs

Ingredients:

# 2lbs 2oz / 1 kg ground beef
# 1 medium onion, very finely chopped
# 2 cloves garlic, crushed
# 1 teaspoon ground cumin
# 1 teaspoon ground coriander
# 1 cup coriander, loosely packed and chopped
# 1 teaspoon salt
# a little vegetable or olive oil

Fresh Tomato Sauce

# 2 medium onions, chopped
# 6 large tomatoes, chopped
# 2 cloves garlic
# 1 teaspoon sugar
# 1 cup water
# 1 teaspoon salt
# 1 teaspoon black pepper
# 1 cup water
# little oil for shallow frying

Method:

1. Preheat oven to 300° F / 150° C.
2. Mix all the ingredients together in a large bowl. Shape into balls, just bigger than a golf ball.
3. Place meatballs on greased baking trays. Gently brush with a little oil. Bake for about one hour until the outside of the meatballs is brown. Turn once during the cooking time.

Fresh Tomato Sauce
4. Gently fry the onions until they are soft and well browned.
5. Add the garlic,tomatoes, coriander and water. Season with salt and pepper.
6. Simmer for about 15 minutes, until the sauce thickens.

To assemble:

7. Place the meatballs in an ovenproof dish. Cover with tomato sauce. Bake at 350° F / 180° C for about 40 minutes. The meatballs will cook a little longer and the sauce will become richer.
8. Serve this homemade meatball recipe with rice and cooked vegetables or a salad.
