1 cup low-fat peach yogurt
1 tablespoon low sodium soy sauce
1 lime, juice of
2 garlic cloves, chopped
1 teaspoon ground ginger
1 tablespoon fresh parsley, finely chopped
2 boneless chicken breasts, cut in 1/2-inch chunks
1 red onion, cut in large chunks
2 bell peppers, cut in large chunks (red, yellow or green)
3 tablespoons olive oil
salt & pepper
4 bamboo skewers (soaked in water a few hours)

(4 hours preparation includes the time to marinate the chicken.).
-Combine yogurt, soy sauce, lime juice, garlic, ginger and fresh parsley. Add chicken chunks & refrigerate in a sealed container a few hours.
-Preheat grill. Peel onions & cut into thick slices, also chunk peppers.
-Alternate chicken, onion and peppers onto bamboo skewers. Remove excess marinade.
-Brush w/olive oil & season w/salt & pepper. Grill approximately 10 minutes; turn once & cook until brown & cooked through.
-Serve over a bed of hot, cooked rice or fresh salad greens. You can even have as an appetizer with your favorite dipping sauces (bbq, honey-mustard, teriyaki, etc).

Its not really chicken you use pork.
A: my mom makes the best city chicken . After she puts the cubes on the sticks she dips them in milk then in seasoned bread crumbs that she adds garlic salt.She then puts them on a greased pan and cooks them in the oven at 350 from 1 hour to 1 1/2 hours.It is so good.

Skewered Chicken with Lemon Butter Sauce
1/2 cup olive oil
1/2 cup dry white wine
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon dried crushed red pepper
6 skinless boneless chicken breast halves, but into 1-inch pieces
3/4 cup dry white breadcrumbs
3/4 cup freshly grated Parmesan cheese (about 2 1/2 ounces)
12 8-inch bamboo skewers, soaked in water 30 minutes
1/4 cup (1/2 stick) butter
2 tablespoons fresh lemon juice
Mix first 6 ingredients in large bowl. Add chicken; toss to coat. Cover and refrigerate 1 hour. Preheat broiler. Combine breadcrumbs and Parmesan cheese in another large bowl. Remove chicken from marinade; discard marinade. Add chicken to breadcrumb mixture; toss to coat. Arrange chicken on skewers. Broil chicken until cooked through, turning frequently, about 8 minutes. Transfer to platter. Meanwhile, melt butter in heavy small saucepan over medium heat. Remove from heat and mix in lemon juice. Drizzle butter over chicken.

A: EASY BARBECUE KABOBS
1 can (20oz.) Pineapple Chunks, 1/3 cup bottled barbecue sauce
1 pound boneless, skinless chicken breasts, cubed or
1 pound jumbo shrimp, peeled and deveined
1 Red or Green Bell Pepper, cut into cubes
1 zucchini, sliced
Drain pineapple chunks; reserve 2 tablespoons juice.
Stir together reserved juice and barbecue sauce in small bowl; set aside.
Thread pineapple chunks, chicken, bell pepper and zucchini onto skewers. Brush with barbecue sauce.
Grill or broil kabobs 10 to 15 minutes or until chicken is no longer pink, turning and brushing occasionally with barbecue sauce. Discard any remaining barbecue sauce. Serve with coleslaw and green beans, if desired.

Can I get a marinade recipe too?
A: My marinade is pretty simple.
I use
Soy sauce
oyster sauce
fresh minced garlic
fresh minced ginger
teriyaki sauce
Set half the mixture aside for basting , use the rest to marinate the chicken.
Use boneless chicken breasts
Rinse chicken and pat dry with paper towel.
For the rest of this recipe , remember to cut everything to be around the same size.
Use metal skewers , if you have to use wooden ones , soak them in water for a couple hours first.
I use
Green bell pepper (or red)
Thick pieces of purple onion
Button mushrooms
cherry tomtatoes
Marinate the chicken for an hour before
Build the skewers , jam everything on there nice and tight. You can also use pineapple chunks on this recipe because of the teryaki
Grill on a barbeque , make sure to clean and oil the rack with some oil on paper towel or something so your kebabs don’t stick.
Place kebabs on grill , baste and rotate them. They only take about 8 minutes depending how hot your BBQ is.

I have no Grill and I want a easy recipe using vegetables and easy houshold ingrediants in a oven or duch oven useing it as a grill.
A: I really dont use a recipe for my kabobs…we just add some vegetables cut up that we all enjoy…and cut up some boneless, skinless chicken breasts. We also season the meat and veg’s to taste…using garlic, pepper, salt, and even a small amount of worcetesire sauce..
Put all ingredients on a kabob stick or wrapped in some aluminum foil…put in oven on about 350 degrees until chicken is fully cooked.

A: I marinate the chicken in a garlic marinade:
2 Tablespoons minced garlic (jar type)
1/2 minced onion
1 tablespoon rosemary leaves
1/2 cup olive oil (grape seed oil is good too)
1/2 cup balsamic vinegar
mix together, marinate for 3 hrs to 24 hrs in refrigerator – remove, cook with veggies on kabobs and serve. So wonderful!

A: Chili-Lime Chicken Kabobs
INGREDIENTS
3 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1 lime, juiced
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
cayenne pepper to taste
salt and freshly ground black pepper to taste
1 pound skinless, boneless chicken breast halves – cut into 1 1/2 inch pieces

DIRECTIONS
In a small bowl, whisk together the olive oil, vinegar, and lime juice. Season with chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Place the chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.

1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
2 cups pineapple chunks (about 1/2 cored peeled pineapple)
1 each: red and green peppers, cut into chunks
1/2 cup KRAFT Original Barbecue Sauce
3 Tbsp. frozen orange juice concentrate, thawed
PREHEAT grill to medium-high heat. Using eight long wooden skewers, (two, side-by-side, for each kabob) thread chicken alternately with pineapple and peppers onto skewers, to create four kabobs.
MIX barbecue sauce and juice; brush on kabobs.
GRILL kabobs 8 to 10 min. or until chicken is cooked through, brushing occasionally with remaining sauce.

I have bought the yogurt sauce and the pita bread to roll it up in but would like a Middle Eastern recipe to flavor the chicken.
A: If yo really want to be authentic, you need to buy some cardamom. seeds are ok. Make a marinade of olive oil , lemon, garlic, allspice,salt and pepper (Arabs love pepper) and throw in a couple of cardamom seeds. If you can soak the chicken pieces overnight, it will be tastier, Now put them on skewers alternating with pieces of onion, tomato and green pepper. As you grill them, make sure to brush on more marinade. It should be delicious,

A: Do a combo of beef, chicken, mushrooms, green pepper, onion, and pineapple. Cut into chunks. Put in a large ziplock. Mix Teriaki baste and glaze
with some garlic powder. Pour into bag. Squeeze out the air. Marinate for 3 hours. Soak wooden sticks in water for 30 minutes. Preheat the grill. Put meat combo on skewers. Cook on grill until done, basting often with teriaki.

BBQ Chicken
INGREDIENTS
4 skinless, boneless chicken breast halves – cubed
1 large green bell pepper, cut into 2 inch pieces
1 onion, cut into wedges
1 large red bell pepper, cut into 2 inch pieces
1 cup barbeque sauce
skewers
DIRECTIONS
Preheat grill for high heat.
Thread the chicken, green bell pepper, onion, and red bell pepper pieces onto skewers alternately.
Lightly oil the grill grate. Place kabobs on the prepared grill, and brush with barbeque sauce. Cook, turning and brushing with barbeque sauce frequently, for 15 minutes, or until chicken juices run clear.
Sweet Pineapple Skewers
You can do the same by just mixing some brown sugar,
pineapple juice, some grated or powdered ginger root , minced garlic, and mix it together and use as a basting sauce.
Skewer some pineapple chunks in between the veggies and serve over rice. Foreman grill works well with either recipe.

Q: Looking for a Carribean Chicken with Banana Shish Kabob Recipe?
I ate this great shish kabob in a restaurant that is no longer in business. I think it was Jamaican style boneless grillled chicken wrapped in bacon and chunks of onion and bananas on skewars. Would like to know if anyone knows the recipe or anything like it. Looking for the seasonings, and dipping sauce if possible or anything close to this. Thanks
A: This may not be exact, but it sounds close. Enjoy!
4 skinless, boneless chicken breast halves, cut into chunks to fit on skewers
8-10 slices of bacon
2 sweet chopped onions like vidalia, yellow or bermuda
1 jalapeno chile, seeded and minced
1 tablespoon minced, peeled fresh ginger
2 tablespoons apple cider vinegar
3 tablespoons fresh Key lime juice
2 tablespoons Worcestershire sauce
1 tablespoon plus 1 teaspoon vegetable oil
1 teaspoon ground allspice
1 teaspoon basil
1/2 teaspoon plus 1/8 teaspoon kosher salt [if possible - it is coarser]
1 cup of sliced bananas
1 cup of pineapple cubes (fresh if possible)
1 cup of mango cubes (fresh if possible)
1 cup of fresh tomato chunks
1 red pepper, cut into 1-inch strips
1 green pepper, cut into 1-inch strips
PREPARATION:
Make the marinade. In blender or in food processor process onions, jalapeno, ginger, vinegar, 2 tablespoons Key lime juice, Worcestershire, 1 tablespoon oil, allspice, basil, and 1/2 teaspoon salt until a thick paste forms.
Place chicken in small bowl or in ziptight plastic bag and add marinade mixture, turning the chicken until it is completely coated.
Cover bowl or seal bag and refrigerate chicken 1 hour to marinate.
In the meantime, in small bowl, toss bananas, pineapple, mango, tomato and red and green peppers with remaining 1 teaspoon oil, 1 tablespoon Key lime juice and remaining 1/8 teaspoon salt.
Preheat grill or broiler.
Wrap chicken chunks with 1/2 strips of bacon. On four metal skewers, alternately thread chicken, banana, pineapple, mango, tomato and pepper pieces.
Place kabobs on grill or on a rack in broiling pan. Brush kabobs with any remaining marinade. Broil kabobs 10 minutes. Turn and broil until chicken loses its pink color throughout, about 5-10 minutes longer. Makes 4 servings.
