Ribs: When you buy ribs at the butcher counter, you often get a full rack of ribs that wont fit on a plate. Usually you have to cut these long racks in half to get the perfect serving size (about 4 to 6 bones per half rack.) Youll get 4 such half racks from 2 full racks of ribs. Preheat the oven to 300? F. Tear off 4 pieces of aluminum foil that are roughly 6 inches longer than the ribs. Coat the ribs, front and back, with the barbecue sauce. Place a rack of ribs, one at a time, onto a piece of foil lengthwise and wrap it tightly. Place the ribs into the oven, with the seam of the foil wrap facing up. Cook for 2 to 2 1/2 hours or until you see the meat of the ribs shrinking back from the cut ends of the bones by about 1/2 inch. This long cooking time will ensure that the meat is tender. Toward the end of the cooking time, prepare the barbecue grill. Remove the ribs from the foil and smother them with additional barbecue sauce. Be sure to save some of the sauce for later. Grill the ribs on the hot barbecue for 2 to 4 minutes per side, or just until you see several spots of charred sauce. Watch for flames and do not burn. When the ribs are done, use a sharp knife to slice the meat between each bone about halfway down. This will make it easier to tear the ribs apart when they are served. Serve the ribs piping hot with additional sauce on the side, if desired. Sauce: Combine all of the ingredients in a saucepan over high heat. Use a whisk to blend the ingredients until smooth. When the mixture comes to a boil, reduce the heat and simmer uncovered. In 30 to 45 minutes, when the mixture thickens, remove it from the heat. If you want a thicker sauce, heat it longer. If you make the sauce too thick, thin it with more vinegar. Reprinted in The Sacramento Bee October 15, 1997. NOTES : If youve got time to marinate the ribs, try it. They are great when theyve been soaking in this sauce for 24 hours before cooking. Just prepare the ribs in foil as described in the rib recipe and keep them in the refrigerator. The next day, place them in the 300? oven, foil and all, and bake. The sauce also goes well on other cuts of ribs and chicken. Q: My singles group is having a “best barbecue” contest at our next cook-out! Can you recommend a recipe?
It doesn’t matter if we make brisket, ribs or what but it must be barbecued and, honestly, I usually just get barbecue sauce out of the bottle. However, this is a challenge. I need a really good recipe. Anyone got any recipes or know a great website?

A: I make my own barbecue sauce in the crock pot…

You need these ingredients to start:

1 cup of molasses(this is super sticky, so just eyeball it out of the jar rather than measuring it)
1 cup of ketchup
2 tablespoons of chopped or minced garlic from the jar
1 Tbsp. of Dijon mustard(more or less to taste)
1/2 tbsp. of worchestire sauce
A dash or two of hot sauce depending on how spicy you like things
1/4 cup of chicken broth or stock(from cooked chicken or the can)
1/2 tsp of black pepper or crushed red pepper if you like things spicier
A dash of salt

For later:
Brown sugar
Pineapple rum or crushed pineapple

Put the first set ofingredients into the crock pot on low, the sauce may be somewhat thin at this stage but it will thicken as you add other ingredients later. Allow to heat for an hour or so, then add several teaspoons of brown sugar and a small amount of pineapple rum or crushed pineapple. Repeat this process several times throughout the day, adding more worchestire, garlic(I use A LOT of this) or hot sauce to balance the sweet with the spicy. Keep tasting the sauce with every “seasoning”, keeping the flavor balance. You will be surprised how much brown sugar you can put in the sauce. Gradually cooking the sauce at a low heat and layering the flavors really makes the sauce blend together. I can cook a barbecue sauce for 4-8 hours in the slow cooker, just make sure you stir it often so it doesn’t burn or stick to the sides. You can easily double or triple the recipe depending on how much sauce you need. I get so many compliments on the barbecue sauce, it’s great on ribs or chicken or a pulled porkloin roast.

Q: what is the best barbeque sauce recipe?
I am a semi-experienced barbecue saavy teenager who loves grilling ribs and making the barbeque sauce from scratch. I get many complements for my ribs and the sauce but would like to have different variations of the sauce. Anyone have suggestions?

A: 1/2 cup strawberry jam
Zest and juice of 2 limes, finely grated
1/4 cup thin soy sauce
1/4 cup finely minced ginger
1/4 cup fresh mint leaves, minced
2 tablespoons habanero hot sauce
PREPARATION:
Combine all ingredients and mix well. This sweet and spicy sauce works great as both a mariande and a barbecue sauce. Since it has sugars in it, do not brush onto grilled foods until they are almost ready to leave the grill.

Q: Barbecue ?
If you worked for year at the best ribs, would you give away the recipe to family if they asked you? And by the way you know that they would F’up the recipe because they would not spend the 36 hours needed.

A: If you know they’re going to just screw up the recipe anyway, then it won’t taste like yours, now will it?

99% of the time, they won’t go to the trouble to even cook it, so don’t worry about giving them the recipe. If your skills are as good as you think they are, then you will always have an edge over everyone else when it comes to cooking…it comes from you gut, not the recipe!

McCain defends ‘pig’ remark reaction
Joyce Behar, co-host of ‘The View,’ calls his Web ads lies. Obama ‘shouldn’t have said it,’ McCain insists.

Taking his campaign to the daytime talk show circuit Friday, John McCain said his camp was not out of bounds when it released a Web video this week suggesting that his Democratic rival, Barack Obama, compared Republican vice presidential nominee Sarah Palin to a pig.

The controversy began Tuesday evening after Obama told the crowd at a town hall meeting in Lebanon, Va., that McCain’s efforts to present himself as an agent of change were disingenuous. Arguing that the Arizona senator does not differ from President Bush on issues such as tax policy and “Karl Rove-style politics,” Obama added: “That’s not change… . You can put lipstick on a pig, and it’s still a pig.”

McCain’s surrogates expressed outrage, claiming the comment was a clear reference to Palin because she is the only candidate in the race who wears lipstick and because her signature line in her convention acceptance speech was that the difference between a hockey mom and a pit bull is lipstick.

During McCain’s appearance on ABC’s “The View” on Friday, co-host Joy Behar asked him why he approved a campaign Web video that showed Obama’s pig remark after a frame that read “Barack Obama on Sarah Palin.”

“They’re lies,” Behar said, referring to that video and another McCain ad, about Obama’s record on sex education.

“Actually, they are not lies,” McCain replied crisply.

“He shouldn’t have said it,” McCain said of Obama’s pig remark. “He chooses his words very carefully, and this is a tough campaign.”

McCain added that the harsh tone of the campaign would be different if the Illinois senator had accepted his invitation to appear at joint town halls across the country this summer.

McCain, making a concerted effort to win over female voters, generally received a warm reception from the live audience, though he drew boos when he reaffirmed his position that the abortion rights ruling in Roe vs. Wade was “a very bad decision” that should be overturned.

His appearance also offered another chance to strongly defend Palin’s experience as governor of Alaska for nearly two years and, before that, mayor of Wasilla, Alaska, for four years. “She’s ignited a spark in America,” he said.

In a lighter moment, co-host Barbara Walters needled McCain about his recent statements that Palin is the greatest vice presidential candidate “in the history of the United States.”

“Greater than John Adams, who became president? Greater than father George Bush who became president? That sound a little strong?” Walters asked.

McCain chuckled: “Politicians are never given to exaggeration or hyperbole, as you know. But the fact is, I think she’s a great person, she’s a great governor… . I’m very happy and very pleased to have her.”

He and his wife, Cindy, also taped an appearance on “Rachael Ray,” to air Sept. 22, in which he extolled his “regular guy” interests, including barbecuing – he divulged his ribs recipe, which he can cook on his four grills – and his favorite TV shows: “Lost,” “The Office” and “24.
