peach cobbler
* 1/2 cup butter or margarine, melted
* 1 (16 ounce) can sliced peaches
* 1 1/4 cups sugar, divided
* 1 cup all-purpose flour
* 1 cup milk
* 2 teaspoons baking powder
* 1/4 teaspoon salt
1. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring the peaches and juice just to a boil. Meanwhile, in a mixing bowl, combine 1 cup sugar, flour, milk, baking powder and salt; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining sugar. Bake at 400 degrees F for 25 minutes or until cake tests done. Serve warm.

7cups cups(1.75L) sliced, pitted and peeled peachpeaches or nectarines
1/3 cup cup(75 mL) granulated sugar
1 1tbsp (15 mL) cornstarch
1 1tbsp (15 mL) lemon juice
Biscuit Topping
1 cup (250 mL) all purpose flour
1/4 cup (50 mL) granulated sugar
1 1tsp (5 mL) baking powder
1/4 tsp (1 mL) baking soda
pinch salt
1/4 cup (50 mL) butter, cold
Biscuit Flavouring
1 tsp (5 mL) vanilla
3/4 cup (175 mL) buttermilk
Preparation:
In large bowl, gently toss peaches with sugar, cornstarch and lemon juice. Scrape into 8-inch (2 L) square glass baking dish.
Biscuit Topping: In bowl, whisk together flour; sugar; baking powder; baking soda and salt. Using pastry blender or 2 knives, cut in butter until crumbly.
Biscuit Flavouring:In measuring cup, stir vanilla into buttermilk; drizzle over flour mixture, stirring with fork to form soft, sticky dough. With spoon, drop dough in 9 evenly spaced mounds over fruit.
Bake in 400°F (200°C) oven for about 35 minutes or until bubbly and topping is light golden and no longer doughy underneath when lifted with spoon.

you need….
1 cup Sugar
1 cup Flour
1 cup Milk
1 stick of Butter (melted) ( = 1/2 cup, 115 gr )
2 large cans of Sliced Peaches
Pre-heat oven to 350 to 375 degrees
pour all ingredients in glass dish that you’ll be baking in (large rectangular size works best)
It best to mix all together except peaches and then put peaches in last then stir them in the mixture until evenly spread. Bake for 30 minutes until light golden brown and let cool but serve warm.
You can even substitute the Peaches for Blackberries or Cherries

2 store bought refrigerated pie doughs

Canola oil spray
1 pint vanilla ice cream, for serving
Preheat the oven to 350 degrees F.
In a large saucepan, add peaches, 1 stick of butter, 1 cup of sugar, cinnamon, and nutmeg and bring to a simmer. Add bread crumbs and stir. Using a sprinkle of flour, roll out both pie crusts; 1 will be used for the top of the cobbler and 1 for the bottom.
Spray a 10-inch square pan with canola oil and place 1 layer of dough into the baking dish. Place a few chips of butter, as well as a dusting of the remaining sugar, on the bottom crust. Pour the peach mixture into the baking dish. Cut the top layer of dough into strips and arrange them on the top of the peaches in a lattice pattern. Top with 3 or 4 chips of butter and bake for 25 to 30 minutes or until the crust is brown and the peaches are bubbling. Serve warm with vanilla ice cream.

2 teaspoons baking powder
1/2 teaspoon kosher salt
16 tablespoons (2 sticks) cold unsalted butter

Heat the oven to 375 degrees F.
In a large bowl add the peaches, bourbon, 1/4 cup sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.

Directions:
Melt butter in your baking pan. Mix flour and sugar, add milk, blend well and pour over butter. Add drained peaches. Bake at 350 degrees until top crust is bubbly and brown, (about thirty to forty-five minutes).

25 minutes or till biscuit slices are golden. Serve warm with Sour Cream

DIRECTIONS
In a medium bowl, sift together the flour, 3 tablespoons sugar, and salt. Work in the shortening with a pastry blender until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg and cold water. Sprinkle over flour mixture, and work with hands to form dough into a ball. Chill 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Roll out half of dough to 1/8 inch thickness. Place in a 9×13 inch baking dish, covering bottom and halfway up sides. Bake for 20 minutes, or until golden brown.

Piecrust for Double-Crust Pie you can make your own or do what I do and use Pillsbury Pie Crust in the red box in the refrigerated section of your super market.
3 pounds medium peaches, peeled, pitted and cut into slices
2 Tablespoons cornstarch
1 cup sugar
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon, plus more for the top crust
4 Tablespoons (1/2 stick) butter, chilled, cut into small pieces
Preheat the oven to 375 Lightly butter a round baking dish, like a casserole dish.
In a medium bowl, toss the peaches, cornstarch, sugar, lemon juice, and cinnamon. Fold in the butter.
Spoon half of the peach mixture into the prepared dish.
Place a piece of rolled out pie crust ontop of peaches, top with remaining peaches. Place last piece of pie crust on top. Crimp edges of top crust. Cut a few slits in top, place on a pan to catch any drips. (In Pattie’s recipe she cuts the top piece of dough into strips and does a lattice crust. I have done it that way for company, but when it’s just for me I don’t bother.)
Bake until the fruit juices are bubbling and the top is golden brown, about 40 minutes. Sprinkle the top of the dough with cinnamon. Serve hot, warm, or at room temperature.
When serving it hot top with Vanilla Ice Cream and you will think you have died and gone to heave.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

A: Here’s one that our family does, but using canned peaches. It’s super easy, although I’m not certain how the fresh peaches would translate (honestly, I can’t get ripe peaches at the grocery stores, so I’ve kinda given up trying).
Pour two large cans of sliced peaches into a 9 x 13 baking dish
In a separate bowl, cut 1 stick of butter into one package of dry yellow cake mix.
Sprinkle this mixture onto the peaches.
Bake at 350 until the topping is golden brown – usually 45 minutes to an hour.
FYI, this recipe also works really well if you substitute the peaches for pumpkin custard, just like you’d make for pie.
