BEST MEATLOAF

BASIC MIX:

1 1/2 pounds ground beef
1 c. fresh Italian style bread crumbs
1/4 cup fresh parsley, chopped
3-4 cloves garlic, finely minced
1 large onion, finely chopped
1 large green bell pepper, chopped
1 egg
1 1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1 8 oz can tomato sauce
1 cup ketchup
1/2 cup water or beef stock (can use bouillon)
3 tbsp. Balsamic vinegar
3 tbsp. brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 c. Parmesan, grated (optional)

In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.
In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.

Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.

Optional Variations:

Choose one:
1. Eliminate salt, bouillon, and substitute 3 tablespoon onion soup mix. Sprinkle top with tomato soup and crushed crackers instead.

2. Use old-fashioned rolled oats instead of bread crumbs.

3. If you have leftover bread, especially Italian or French bread, substitute milk for the water listed in recipe, and soak about 2 cups bread in the milk prior to mixing into the meat mixture. Squeeze out the excess slightly before adding. Substitute this bread for the bread crumbs. After mixing everything together, you can also form this meat mixture into meatballs and fry in 1/2 inch olive oil in a heavy bottom skillet (such as cast iron). If making Italian meatballs, leave out the brown sugar and Dijon mustard, but be sure to use the Parmesan cheese. Season the oil in the pan with 2-3 whole cloves garlic (don’t chop it up or it will burn instead of just roasting).

4. If you’re in a hurry, you may use as a substitute 2 cups of barbecue sauce and eliminate the following ingredients:

1 c. ketchup
1 8 oz can tomato sauce
3 tbsp. balsamic vinegar
3 tbsp. of brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce

5. Eliminate the sauté crumbs. Sauté this mixture with onion and garlic for 5 minutes and layer a casserole with no-cook lasagna noodles. Place meat mixture to cover noodles. Add a sprinkling of Parmesan cheese and:

1/3 pound ricotta mixed with one egg
1/4 c. freshly chopped Italian parsley or 1 c. fresh spinach
1/2 pound grated mozzarella cheese

Cover with another layer of noodles, and top with 1 large can of tomato sauce mixed with 1/2 teaspoon each basil and oregano. Place in 325 degree oven 60 minutes or until bubbly, basting occasionally with sauce to prevent lasagna from drying out.
6. Form meat mixture into large doughnut shapes, approximately 6-7 inches across. When forming the doughnut, don’t allow the center to actually become a doughnut hole; just thin it out, leaving a well in the center. Optionally, brush with ketchup. Crush 8-10 Saltine or Ritz crackers into crumbs and sprinkle over the doughnut shaped burger, concentrating the excess crumbs into the center. Sprinkle with onion and garlic powder and a liberal dose of soy sauce, allowing a 1/2 spoon or so to form in the well. This can optionally be topped with cheese and canned mushrooms if desired. Place in microwave and cook on high for 3 minutes or so, according to size, until the juices run clear and meat doughnut is done. Served with meat drippings as topping, there is no need for a bun. This is a fast and easy low-carb lunch!

7. Place 3-4 strips of bacon lengthwise along the top of the meatloaf. Garnish with rings of green or red bell pepper and bake as usual. 8. Use your imagination, get creative, and enjoy!

A: Just cut the recipe in half and don’t bake quite as long.

2 – POUND ITALIAN MEATLOAF

2 lbs. ground beef
2 c. soft bread crumbs
1/2 c. chopped onion
1/4 c. grated Parmesan cheese
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper

Mix above ingredients lightly.

SAUCE:

1 (8 oz.) can tomato sauce
1/2 tsp. oregano

Flatten meatloaf and place in 13 x 9 inch dish or shape into a loaf. Mix tomato sauce and oregano. Pour on top of meatloaf. Bake at 350 degrees for 30 minutes. Take meatloaf out of oven and pour off drippings. Put Mozzarella cheese on top and bake for another 30 minutes.

A: 1 teaspoon prepared horseradish
1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef, moistened
1/2 onion, finely chopped
1 egg
2 teaspoons Worcestershire sauce
1 cup bread crumbs
1 cup ketchup

Preheat oven to 350 degrees F.
In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.

In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.

Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.

Bake uncovered for 45 to 60 minutes.

ok, so I need yet another MeatLoaf Recipe!! the last one was good, but I really want this one to be different..

Clare’s meatloaf- Maui Island Cookbook
1/2 c. Grape-Nuts cereal
1 pound hamburger
1/4 c. chopped onion
1/2 c. water
1 egg, slightly beaten
1/2 tsp. salt
Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350′. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. NOTE: This meatloaf was good and VERY moist. The next time I may add Italian Seasoning. I let it bake for 50 minutes.

My Stuffed Meat Loaf -Doris Roberts
2 pounds ground beef
2 eggs
1 medium onion, chopped
A couple of pinches of parsley
1/2 cup Italian bread crumbs
2 cloves garlic, chopped
Salt and pepper
8 ounces ricotta cheese
A couple of pinches of dried basil
1 (28-ounce) can of whole peeled tomatoes with basil, Bread crumbs
1. Mix first 6 ingredients, salt and pepper to taste, and mold in standard-size loaf pan.
2. Scoop out the center of the loaf.
3. In a separate bowl, mix cheese and basil, salt and pepper to taste, and fill in the hole with this mixture.
4. Replace scooped-out meat to make a hat covering the cheese mixture.
5. Top with tomatoes. Bake at 350 degrees for 45 minutes.
6. Sprinkle bread crumbs over the top and bake another 15 minutes. Makes 6 to 8 servings.

A: Mozzarella Stuffed Loaf

1 1/4 pounds ground turkey breast
1 10-oz pkg frozen chopped spinach, thawed, squeezed dry
1/2 cup minced onion
1/2 cup seasoned bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
2 egg whites
salt and ground black pepper, to taste
1/4 teaspoon cayenne pepper (I omit when using beef)
4 ounces fresh mozzarella, cubed
2 tablespoons ketchup
2 tablespoons Dijon mustard

Preheat oven to 375.

In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.

Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.

In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing

ngredients:
1-1/2 pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 teaspoon instant minced onion
1 15 ounce can tomato sauce, divided in half

Topping:
Reserved half of tomato sauce
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 cup sugar
2 teaspoons prepared mustard

Instructions:
Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one half of the can of tomato sauce. Form into a loaf . Bake at 350 degrees for 50 minutes.

In a saucepan, combine topping ingredients and bring to a boil. Pour over meat loaf, and return to oven for 10 minutes more.

A: Country Meatloaf

2 tablespoons Canola or other vegetable oil
1 large onion, chopped
1 celery stalk, finely chopped
2 minced garlic or 1/4 teaspoon garlic powder
3 white or whole wheat bread slices or equal amount of seasoned bread crumbs
2 pounds lean ground beef or turkey or pork or mixture of all
1 medium carrot, finely shredded
8 oz Monterey Jack cheese, shredded
1-1/2 teaspoon salt
1/4 teaspoon ground red cayenne pepper
1/2 teaspoon oregano
1 egg, beaten
8 oz can tomato sauce
1 tablespoons light brown sugar
1 tablespoons cider vinegar
1 tablespoon prepared mustard

In large saucepan over medium heat, heat oil. To hot oil add the chopped onion and celery. Cook about 8 minutes, stirring occasionally. Add garlic, cook another 2 minutes. Into a food processor or blender, put in bread slices and process to coarse crumbs. (If using ground turkey, I use only 2 slices of bread.) In large bowl add onion, celery, garlic mixture to bread crumbs and mix well. To the bread and onion mixture add 6 oz of the cheddar cheese., ground meat, shredded carrot, salt, pepper, oregano, egg, brown sugar, vinegar, mustard, and half of the tomato sauce. Mix thoroughly. (hands do it best). In a 12×8 inch baking dish or loaf pan, with hands shape ground beef mixture into loaf shape, about 8×4 inches. Set aside. Sprinkle remaining cheddar cheese over top. Spoon over remaining tomato sauce on top of meat loaf. Bake in 350 deg F. oven for 1-1/2 hours. Serve meat loaf warm or cover and refrigerate to serve cold.

Tasty Meatloaf

1-1/2 pounds lean ground beef
1 cup burgundy wine
1/4 teaspoon dried sage
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon dry mustard

1 tablespoon Worchestershire sauce
3 slices bread, torn into small pieces
1 egg
2 cloves garlic, minced
1 small onion chopped
1 4 ounce can sliced mushrooms, drained
2 tablespoons brown sugar, packed
1/3 cup catsup
1/2 teaspoon ground ginger
1/2 teaspoon garlic salt
2 teablespoons soy sauce
1 teaspoon dry mustard

Heat oven to 350 F. Mix beef, wine, sage, thyme, salt, 1/2 teaspoon dry mustard, pepper, Worchestershire sauce, bread, egg, galic, onion, and mushrooms together. Spread mixture in a 8-1/2×4-1/2×2-1/2 inch or 9×5x2 inch loaf pan. Mix brown sugar, catsup, ginger, garlic salt, soy sauce, and 1 teaspoon dry mustard together in a small bowl. Mix well. Spread sauce over meatloaf. Bake for 1 to 1-1/4 hours or until done.

The brown sugar was mixed in with the meat along with the crackers, sauce, and mustard seed. Remaining sauce was put on top along with water on the sides of the loaf.

Turkey Meatloaf Recipe #54752

1¼ hours | 10 min prep

SERVES 5

2 tablespoons butter (or margarine)
1 cup onion, chopped
3 cloves garlic, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Melt butter in a skillet.
Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
Place mixture in a large bowl to cool for 5 minutes.
Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, Worcestershire sauce, salt, and pepper with onion mixture.
Press meatloaf into an 8×4-inch loaf pan.
Spread remaining catsup on top.
Bake in a 350 degree oven for 50-55 minutes.
(Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

A: Here is my simple, tasty recipe:

2 lbs ground beef
1 cup prepared stovetop stuffing (any flavor)
2 eggs
1 tbs meat tenderizer
1/2 cup seasoned bread crumbs
1/2 cup prepared minute rice (any cooked rice will do)
2 cups of mild salsa (or spicy if you like that)
shakes of salt, pepper, garlic powder
mix it all together, using only 1 cup of salsa in the meatloaf, the rest of it on top of it so that it bakes nicely until cooked through (425 degrees for 1 hour, 15 minutes or so).
I like to make it cook a little longer so the outside edges are crispy.

This will make 2 loaf pans. Cook them both, stick one oin the freezer if you don’t eat it. Makes a nice easy dinner later!

Serve with Mashed potatoes!

I’m not a huge fan of meatloaf but my mom loves it. I think however that if I found a really good recipe I would like it too. I should have all the ingredients. I have the basics like the meat, bread crumbs and eggs etc. I have 3 lbs. of meat so I would prefer a recipe using 3 pounds (I know that’s a lot but there’s no need to be wasteful).

Loaf:
1 lb Ground Beef
2/3 Cup Bread Crumbs
2 beaten eggs
3/4 Cup Milk
Onion Powder
1 tsp Salt
1 tsp Pepper
1/2 tsp Sage

Sauce:
1/2 Cup Ketchup
3 Tbsp Brown Sugar
1 tsp dry Mustard
1/4 tsp Nutmeg

Mix together all loaf ingredients and blend well. Place in 8 ½ inch loaf pan. Mix sauce and spread over the top of the loaf. Bake at 350° for 1 hour.

A: CHICKEN MEATLOAF

2 lb. ground chicken
1 c. soft bread crumbs
1 c. tomato sauce
1/4 horseradish sauce
1/2 c. finely chopped onion
1/4 c. butter (butter flavored), melted
1/4 c. chicken broth, heated
1 tsp. salt
1/2 tsp. pepper
2 eggs

In large bowl, mix together chicken, bread crumbs, onion, salt and pepper. In small bowl; beat eggs. Add tomato sauce and horseradish sauce; mix well. Pour egg mixture into ground chicken mixture and mix well.
Lightly oil 9 x 5 x 3 inch loaf pan; pack chicken lightly into prepared pan. Bake in 350 degree oven about 1 hour, basting occasionally with melted butter and chicken broth which have been mixed together. Chicken loaf will be done when it shrinks from sides and springs back at a gently touch. Pour off liquid. Let loaf sit several minutes, turn out onto a serving platter.

this is my favorite. the only changes i make are, i add 1/4 pound of bob evans sausage and mix it together with the ground beef.

A: Have you tried turkey meatloaf? I love it! I don’t really use recipes in my own cooking, but I’m sure I can remember everything that goes in it.

1 package ground turkey(I prefer the 97/3)
1 egg
1/4 cup tomato sauce(I use jarred pasta sauce)
handful of bread crumbs(you could also use oatmeal, which is just as delicious!)
salt, pepper, garlic
Mix all together, form into a meatloaf and place in a baking dish at 350 for 1 hour.

I usually cut up some potatoes, onions, carrots and celery and place around the meatloaf in the bottom of the pan with some broth, it adds great flavor and you won’t have to make any other sides.

A: Cheesy Meat Loaf
3 pounds lean ground beef
1 cup fresh bread crumbs
1 (8-ounce) can tomato sauce
8 ounces Swiss cheese or extra sharp cheddar, grated (about 2 cups)
1/4 cup milk or beef broth
2 large eggs, slightly beaten
2 tablespoons Worcestershire sauce
2 tablespoons minced onion
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon pepper
3 tablespoons tomato paste (optional)

1. Preheat the oven to 350*F (175*C). Line a baking sheet that has a rim or 13 x 9 x 2-inch baking dish with a couple of thickness of foil (for easier cleanup).
2. Mush all the ingredients except the tomato paste together in a large bowl until well mixed. Mold the meat loaf mixture into a large, flattish mound in the center of the prepared pan. “Ice” the top with the optional tomato paste if you want.
3. Bake the meat loaf for 1 1/2 hours, or until it is browned and cooked through. Serve it hot the first day and cold, in sandwiches, thereafter.

Serves 8.
