A: CHOCOLATE BROWNIE COOKIES
These are one of my signature cookies. They taste like miniature brownies — but oh, the texture! They’re reminiscent of a meringue, with a soft, chewy, fudgy center and a crisp exterior that crackles appealingly. Since these cookies are smaller and less dense, they have an elegance that brownies lack. And they don’t require the same commitment as a big, gooey bar. I can never eat just one of these. They are also a particular favorite of Gramercy Tavern owner Danny Meyer, who can’t eat just one, either!
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 large eggs
2/3 cup sugar
1/2 tablespoon brewed espresso
1 teaspoon vanilla extract
2 tablespoons unsalted butter
8 ounces bittersweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
1/2 cup toasted nuts or dried cherries – optional
1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In the bowl of an electric mixer, briefly whip the eggs to break them up. Add the sugar, espresso, and vanilla and beat on high speed for 15 minutes, until thick.
4. While the eggs are whipping, place the butter in the top of a double boiler, or in a small metal bowl suspended over a pot of simmering (not boiling) water, and scatter the extra-bittersweet and unsweetened chocolate on top. Heat until the butter and chocolate melt. Remove the boiler top from over the water and stir the chocolate and butter until smooth.
5. Gently fold the chocolate mixture into the egg mixture until partially combined (there should still be some streaks). Add the flour mixture to the batter and carefully fold it in. If the batter is very runny, let it rest until it thickens slightly, about 5 minutes.
6. Drop the batter by heaping teaspoonfuls onto the prepared baking sheets and bake until puffed and cracked, 8 to 9 minutes. Cool on a wire rack before removing from the baking sheets.
Makes 5 dozen cookies.
MINT CHOCOLATE COOKIES
Sifting powdered sugar over the cooled cookies adds a festive touch. (It would also be an easy kitchen project for the kids.)
1 cup (2 sticks) unsalted butter, room temperature
1 3/4 cups sugar
2 large eggs
3/4 teaspoon peppermint extract
2 cups all purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Using electric mixer, beat butter and sugar in large bowl until well blended. Beat in eggs and peppermint extract. Add flour, cocoa powder, baking soda, baking powder and salt and beat until well blended. Form dough into 1-inch balls. Place 2 inches apart on prepared baking sheets. Flatten balls slightly to 1 1/2-inch rounds.
Bake cookies until edges begin to firm but center still appears soft, about 13 minutes. Cool on baking sheets 5 minutes. Transfer cookies to racks and cool completely. (Cookies can be prepared up to 5 days ahead. Store in airtight container at room temperature.)

2 1/4 cups all-purpose flour

3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups (12-ounce package) NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
1 cup chopped nuts

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15″x10″ jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes.

I’m looking for a recipe for cookies on a stick. Anyone know if I can just use my sugar cookie recipe and use cookie cutters, and then stick a popsicle stick in it and bake? How about using chocolate chip cookie dough the same way with cookie cutters and a popsicle stick? I would like to hear from people who have done this before. A: Oh, do I have the recipe for you! These little pinwheel cookies are so adorable. I like to stick them into a styrofoam tree that I’ve covered with glitter. They are easy to make and taste good – not overly sweet. Best of luck!

Every year the recipes taste nice, but the dough always turns out too crumbly or too doughy. So any tips on avoiding this, or an awesome recipe is greatly appreciated!

A: Snackie’s Sugar Cookies
These are best glazed with a mixture of powdered sugar and milk and then sprinkled with colored sugar after they cool. The dough can also be used to make Thumbprint cookies. You will need a strong mixer – a KitchenAid helps, but you can always knead in the rest of the flour. The dough does not spread or distort – they can be baked fairly close together and can be shipped or transported without breaking.
1 cup (2 sticks) butter (do NOT use oleo or spread)
½ cup sugar
1 egg
1 tsp vanilla
3 cups sifted all purpose flour
½ tsp baking powder
Cream butter and sugar together until fluffy.
Add egg and vanilla extract.
Add flour and baking powder.
Mix until mixture clings together.
Gather into a ball, wrap in plastic wrap and refrigerate one hour.
Roll out between ¼ and 1/2 inch thick. Bake 5 to 6 minutes at 375F.
Cool on wire rack before glazing or frosting.

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream the butter, brown sugar and white sugar until smooth. Add the eggs one at a time, beating after each addition. Stir in the milk and vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Using a wooden spoon, stir in the rolled oats, chocolate chips and walnuts.
Roll the dough into walnut sized balls, and place 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cool cookies on wire racks

Easy Chocolate Chip Cookies (from cake mix)
1 pkg. yellow cake mix **(I ALWAYS USE DUNCAN HINES)
2 large eggs
1/2 cup vegetable oil
1/2 cup sugar
1 cup finely chopped pecans
1 cup miniature chocolate chips
Mix cake mix, eggs, oil & sugar. Fold in the pecans and chocolate chips. Form into balls, and bake for 10 to 12 minutes at 350 degrees. Don’t overbake!

A: You are better off freezing uncooked dough – take a clue from Pillsbury and preform the dough into serving size portions. Use a cookie Sheet and gallon size ZipTop bag and freeze flat then once frozen remove the cookie tray to conserve space, remove pieces to use as needed. It will keep for up to 4 months.

A: OLD FASHIONED SOFT SUGAR COOKIES
Sift together in large bowl:
3 1/4 cups flour
1 teaspoon soda
1/2 teaspoon salt
Add:
1/2 cup soft butter
1 cup sugar
1 egg
1 teaspoon vanilla or nutmeg
Beat at medium speed for 2 minutes.
Add:
1/2 cup thick sour cream
sifted flour mixture
Preheat oven to 375-400F degrees.
Beat at low speed until well blended (1 1/2 minutes). Roll out lightly on floured board to 1/4 inch thickness. Cut and sprinkle with sugar.
Put on prepared cookie sheet. Dot a raisin in the middle and bake about 12 minutes at 375-400 degrees.
GRANDMA’S SUGAR COOKIES (Soft)
1/2 tsp. baking soda
1 sm. c. butter
1 tsp. cream of tartar
1 heaping c. sugar
8 tsp. milk
2 eggs
2 1/2 c. flour
Cream butter, add sugar and eggs. Combine with flour sifted with soda and cream of tartar. Add milk alternately. Mix soft. Drop by spoonfuls on lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Makes 3 dozen. Ice and decorate if desired.
